What we eat deeply impacts our health and welfare because we make every part of ourselves from our food. Each day what we eat creates our muscles, bones, lungs, kidneys, heart, brain, liver, hair, and skin. What we eat also determines how we age. Food is also partly responsible for how we think and feel, in that it produces the hormones and neurotransmitters that affect energy, mood, and concentration. Our bodies constantly repair and replace worn-out and used-up parts, so each day we have the opportunity to do something right for ourselves by choosing the best possible building materials for construction of ourselves.
